Tasty Sunrise
My ideal ‘tasty sunrise’ would have to be a heart savory recipe with something sweet to top it off. So I decided to go for what I call a loaded potato and a cinnamon roll in a bowl/mug.
I still wanted to keep my gourmet touch to my meals, though they all microwave made. This is super easy and fun.
Remember to always use microwave friendly utensils. Don’t burn down the kitchen!!!
LOADED POTATOES.
INGREDIENTS :
- 4 large potatoes
- 1 Tbsp. butter
- 4 eggs
- 4 strips bacon,
- Shredded cheddar
- Fresh coriander, chopped
- 1 small red onion finely chopped
- Salt and freshly ground black pepper
In the mean time you can chop up your coriander, bacon and onions and shred your cheddar cheese.
By now the potatoes should be ready. Leave them out to cool off for a bit before you make them into pockets.
Lay the first baked potato on its side, and use a knife to carefully cut off the top third of the potato.
With a spoon, hollow out the middle of the potato to make a “bowl”, leaving the potato as thick or thin as you’d like. (Just remember, the more room you leave, the more room for eggs, bacon and cheese!) Repeat with the rest of the potatoes.
Place 1/2 tablespoon of butter in the middle of each bowl.
Then gently break an egg into each bowl, careful not to break the yolk.
Top with bacon, cheese, coriander, and then season with salt and pepper.
PS: I did squeeze in as much bacon, onions and cheese, even under the egg just be careful not to spill!
Put it in the microwave, for about 5-7mins, depending on how runny you like your egg

CINNAMON ROLL IN BOWL/MUG.
Imagine waking up to that lovely cinnamon scent! (sigh) The beauty about this recipe it will only take you 10 minutes, meaning you can whip up the ingredients go finish getting ready come back and carry it and have it on your way to school or work…
So here goes…
INGREDIENTS :
- 1 Tbsp. vegetable oil
- 1 Tbsp. buttermilk
- 1/4 tsp. vanilla extract
- 1/4 cup + 1 Tbsp. all-purpose flour
- 2 1/2 Tbsp. packed light-brown sugar
- 3/4 tsp. ground cinnamon
- 1 dash ground nutmeg (optional)
- 1/4 tsp. baking powder
- 1/8 tsp. salt
Directions
Combine all ingredients in a bowl/mug then whisk together with a fork until combine and nearly smooth.
Microwave mixture on high power for 5 minute then check cake for doneness. If it is not fully cooked microwave for an additional 15 seconds.
Serve warm topped with Cream Cheese Icing or just buy frosting and top it up.
