Wendy Wahito’s Chicken Wings
Ingredients:
- Chicken wings
- Bunch of coriander/ Dhania
- ½ cup of all purpose flour
- ½ teaspoon of cayenne pepper
- ½ teaspoon of black pepper
- 2-3 pinches of salt
- ½ cup of vegetable oil
BARBECUE SAUCE
- ½ CUP OF Soy sauce
- 1 TBS of white vinegar
- 2 cloves of crushed Garlic
- 1 TBS of crushed ginger
- 1 cup of tomato ketchup
- ½ teaspoon of cayenne pepper
- 3 tablespoons of sugar
DIRECTIONS:
Defrost the chicken wings if still frozen, easiest way is to boil them for about 25-30mins, this way they can semi-cook. After in a large bowl sift in the flour together with the black pepper, cayenne pepper and salt. And mix it evenly.
In a large skillet, pour in the oil to start heating. Lightly coat each chicken wing with the flour mixture and when the oil is evenly heated put the chicken wings in and deep-fry them for 7-10 mins till they are golden brown. Place them in a large bowl on some paper towel to drain out the oil.
In a small pot put in all the bbq ingredients and bring them to a boil for about 15mins. If it gets to thick you can add half a cup of water, then boil for another 10 mins.
When the sauce is ready remove the paper towel, and pour in the sauce on to the chicken wings, chop the coriander/dhania finely and sprinkle on top for flavor and garnish.
