- 5 large potatoes (cubed)
- ½ pack of any kind of pasta (fusilli, penne, shells etc.)
- 1 green capsicum strips
- 1 large tomato chopped
- 100g of grated cheddar cheese/ cubed feta cheese
- 1 large white onion (sliced rings)
- 3 leaves of coriander/dhania
- 2 teaspoons of squeezed lemon juice
- Ground black pepper
- ½ teaspoon of paprika
HOMEMADE THOUSAND-ISLAND SAUCE:
- ½ cup of ketchup
- 1tablespoon of white vinegar
- 4 tablespoons of mayonnaise
In a medium size pot, boil the potatoes with some salt, for about 20-25mins make sure they don’t get to soft but are ready. Simultaneously in another pot boil the pasta in boiling salt water for 10-15 mins, follow the directions on the pack, until soft.
In a medium sized bowl place all the thousand island ingredients and whisk till smooth. If it’s too light and more mayo, if it’s too thick add more ketchup or vinegar. But taste to make sure no flavour over rules the rest. Then refrigerate till serving time.
In a small bowl put some boiled water with the onions and 2 pinches of salt and let it soak for about 5 mins. Meanwhile drain the pasta and in the large bowl, which should be your serving bowl. Place the pasta. Tomatoes. Capsicum then seasons it with salt (3pinches), some black pepper and the sweet paprika. Place it in the fridge to start cooling.
The potatoes should be ready, put them in a separate bowl, sprinkle the coriander/dhania, the soaked onions and ¼ tablespoon of mayonnaise and mix evenly. Then refrigerate for 15-20mins
Take out both the salads, put in the potatoes into the pasta salad sprinkle the cheese into it. Don’t forget to serve it with the homemade thousand-island sauce.
