• ½ KG of queen Prawns.
  • 2 tbs. of lemon juice
  • ¼ cup of corn flour
  • ¼ cup of all-purpose flour
  • Black pepper
  • Salt
  • ½ tsp. of turmeric
  • ¼ tsp. of sweet paprika
  • ¼ tsp. of cayenne pepper
  • ½ tsp. all spice
  • ½ cup of milk and water
  • Vegetable oil to deep fry


Make sure your prawns don’t have shells. You could ask your butchery to de-shell for you if possible. I DID!!

Place the prawns in a bowl with lemon, a pinch of salt and pepper. Let it marinade for about 25-30 minutes.

The batter:

In a large bowl mix in all the spices with the corn flour and all-purpose flour then pour in the milk and water and mix thoroughly. The batter shouldn’t be too light or too thick. You can test it with the back of a spoon and see how it drips.

Start to heat up the oil for deep-frying.

Remove the prawns from the fridge and dip them one by one into the batter. Make sure each prawn is fully coated. Place them in the pan when the oil is evenly hot!!

Do not crowd the pan and cook each round for 3-5 minutes.
