• 8-10 large potatoes sliced
  • 1 large red onion
  • 1 large white onion
  • 1 cup of coconut milk
  • Salt
  • Black Pepper
  • 250g Mozzarella cheese
  • 1 pack of Brown onion soup



Preheat your oven at 200 degrees.

Slice and boil your potatoes, remember to sprinkle 2 pinches of salt, boil only for 5-6mins. So they can cook just a little bit. Drain them don’t leave them in the water.

Slice the onions.

In an ovenproof casserole dish, layer the bottom with the potatoes slices, then add some onions, sprinkle salt, black pepper and the brown onion soup powder. Pour a little coconut milk then sprinkle some cheese. Continue layering until you fill the dish, lastly layer the top with cheese and sprinkle some black pepper.

Put it in the oven for 10-15mins at 180 degrees, till its golden brown. Serve while its still hot.
